  • 4 cod fillets (about 6 oz each)
  • 2 tbsp fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 3 garlic cloves, minced
  • 1 tbsp sesame oil
  • 2 tbsp fresh lemon juice
  • Chopped green onions for garnish

Instructions

  1. Rinse cod fillets under cold water and pat dry.
  2. In a bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, sesame oil, and lemon juice until smooth.
  3. Marinate cod fillets in half of the marinade for at least 15 minutes at room temperature.
  4. Heat a non-stick skillet over medium-high heat with a splash of oil. Sear cod for 3-4 minutes per side until golden brown and cooked through.
  5. Pour remaining marinade into the pan during the last minute of cooking to create a glaze.
  6. Serve garnished with chopped green onions alongside steamed rice or stir-fried vegetables.
