- 1 lb lean ground beef
- 1 cup cooked white rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (15 oz)
- 1 cup shredded cheese (mozzarella or cheddar)
- Italian seasoning, salt, and pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, sauté olive oil with chopped onions and minced garlic until translucent (about 3-5 minutes).
- Add ground beef and cook until browned. Stir in cooked rice and drained diced tomatoes.
- Season with Italian seasoning, salt, and pepper; mix well.
- Slice the tops off the bell peppers, remove seeds, and place them upright in a baking dish.
- Generously fill each pepper with the beef-rice mixture and top with shredded cheese.
- Cover loosely with aluminum foil and bake for 25-30 minutes. Remove foil for the last 10 minutes to allow cheese to melt until golden brown.
