  • 4 bell peppers (red, yellow, or green)
  • 1 lb lean ground beef
  • 1 cup cooked white rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (15 oz)
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Italian seasoning, salt, and pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté olive oil with chopped onions and minced garlic until translucent (about 3-5 minutes).
  3. Add ground beef and cook until browned. Stir in cooked rice and drained diced tomatoes.
  4. Season with Italian seasoning, salt, and pepper; mix well.
  5. Slice the tops off the bell peppers, remove seeds, and place them upright in a baking dish.
  6. Generously fill each pepper with the beef-rice mixture and top with shredded cheese.
  7. Cover loosely with aluminum foil and bake for 25-30 minutes. Remove foil for the last 10 minutes to allow cheese to melt until golden brown.
