Instructions
- Preheat oven to 425°F (220°C).
- On a baking sheet, combine tomatillos, jalapeño, garlic, and cilantro. Drizzle with olive oil and roast for 15-20 minutes until softened.
- Transfer roasted vegetables to a blender; add lime juice and blend until smooth. Season with salt and pepper to taste.

- Pour half the salsa verde over the chicken, cover, and reduce heat to low. Simmer for about 15 minutes until the internal temperature reaches 165°F (75°C).
