  • 4 boneless, skinless chicken breasts
  • 4 medium tomatillos, husked and chopped
  • 1 cup fresh cilantro leaves
  • Juice of 2 limes
  • 4 garlic cloves, minced
  • 1 jalapeño pepper, chopped (seeds removed for less heat)
  • 2 tbsp olive oil (plus extra for cooking)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. On a baking sheet, combine tomatillos, jalapeño, garlic, and cilantro. Drizzle with olive oil and roast for 15-20 minutes until softened.
  3. Transfer roasted vegetables to a blender; add lime juice and blend until smooth. Season with salt and pepper to taste.
  4. In a skillet over medium-high heat, add olive oil and sear seasoned chicken breasts until golden brown on both sides.
  5. Pour half the salsa verde over the chicken, cover, and reduce heat to low. Simmer for about 15 minutes until the internal temperature reaches 165°F (75°C).
  6. Serve hot with remaining salsa verde drizzled on top.
