- 3 medium potatoes, diced

- 2 cups low-sodium chicken broth
- 3 tbsp tomato paste
- 2 tbsp low-sodium soy sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 3 cloves garlic, minced
Instructions
- Prepare your ingredients by chopping vegetables into uniform pieces to ensure even cooking (about 10 minutes).
- In the crockpot, layer the chopped vegetables followed by the chicken thighs on top.
- In a separate bowl, mix together the chicken broth, tomato paste, soy sauce, thyme, rosemary, and garlic. Pour over the layered ingredients in the crockpot.

- About 30 minutes before serving, taste and adjust seasoning as needed. For a thicker sauce, remove some liquid and thicken on the stove before returning to the pot.
