  • 4 cups fresh tomatoes (diced)
  • 1 cup fresh basil leaves
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Prepare ingredients by washing tomatoes and basil, then dicing the tomatoes and chopping the onion and garlic.
  2. In a large pot over medium heat, sauté chopped onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  3. Stir in diced tomatoes, salt, and pepper; cook for 10 minutes until softened.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for an additional 10 minutes.
  5. Blend the soup until smooth using an immersion blender or traditional blender.
  6. Return to low heat, stir in torn basil leaves just before serving.
