Ingredients

  • 23 large eggs
  • 1 cup fresh spinach (roughly chopped)
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon olive oil butter blend
  • Salt and pepper to taste
  • Optional: diced tomatoes or onions

Instructions

  1. Gather and prepare your ingredients by chopping the spinach and crumbling the feta.
  2. Heat a non-stick skillet over medium heat; add the olive oil butter blend until sizzling.
  3. Sauté the spinach in the skillet until wilted (about 2 minutes).
  4. In a bowl, whisk the eggs until frothy. Pour them over the wilted spinach and let cook undisturbed for 3-4 minutes until edges set.
  5. Sprinkle feta cheese over half of the omelette before it fully sets.
  6. Fold the other half over and cook for an additional minute before serving.
