Description

  • 12 large pasta shells
  • 15 oz ricotta cheese
  • 2 cups fresh baby spinach
  • 1 ½ cups shredded mozzarella cheese
  • 1 cup marinara sauce
  • ½ cup grated parmesan cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil salted water in a large pot and cook the pasta shells according to package instructions until al dente (about 10 minutes). Drain and set aside.
  3. In a skillet over medium heat, sauté the spinach in olive oil until wilted (3-5 minutes).
  4. In a mixing bowl, combine ricotta cheese, sautéed spinach, garlic powder, half of the mozzarella, salt, and pepper. Mix until smooth.
  5. Carefully fill each pasta shell with the ricotta mixture and place them upright in a greased baking dish.
  6. Pour marinara sauce over the stuffed shells, then sprinkle with remaining mozzarella and parmesan cheese.
  7. Cover with foil and bake for 25 minutes, then remove the foil and bake for another 10-15 minutes until bubbly and golden brown.
