  • 1 medium yellow onion, chopped
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced kielbasa and sauté for 5–7 minutes until browned.
  2. Stir in chopped onion and minced garlic; cook for an additional 3–4 minutes until onions are translucent.
  3. Add bell peppers to the skillet and cook until softened, about 5 minutes.
  4. Pour in rinsed rice and chicken broth; bring to a boil then reduce heat to low.
  5. Cover and simmer for about 20 minutes, until rice absorbs most of the liquid. Check occasionally; add more broth if dry.
  6. Once cooked, fluff rice with a fork before serving. Garnish with fresh herbs if desired.
