Ingredients

  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water.
  2. In a large pot, heat olive oil over medium heat and sauté chopped onion, carrots, and celery for about five minutes until softened.
  3. Stir in minced garlic and ground cumin; cook for one minute until fragrant.
  4. Add rinsed lentils and vegetable broth to the pot; bring to a boil.
