- 1 cup green or brown lentils
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried thyme
- 1 bay leaf
- 2 tbsp olive oil
- Juice of 1 lemon (optional)
Instructions
- Rinse the lentils under cold water until clear. Dice the carrots, celery, onion, and garlic.
- In a large pot, heat olive oil over medium heat. Sauté the onions until translucent (about 5 minutes).
- Add the carrots and celery; cook for another 5 minutes until slightly softened.
- Stir in the minced garlic; cook for 30 seconds until fragrant.
- Add the rinsed lentils, canned tomatoes, vegetable broth, thyme, bay leaf, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover partially, and simmer for 30-35 minutes until lentils are tender.
