Ingredients

  • 1 cup green or brown lentils
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp olive oil
  • Juice of 1 lemon (optional)

Instructions

  1. Rinse the lentils under cold water until clear. Dice the carrots, celery, onion, and garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté the onions until translucent (about 5 minutes).
  3. Add the carrots and celery; cook for another 5 minutes until slightly softened.
  4. Stir in the minced garlic; cook for 30 seconds until fragrant.
  5. Add the rinsed lentils, canned tomatoes, vegetable broth, thyme, bay leaf, salt, and pepper. Bring to a boil.
  6. Reduce heat to low, cover partially, and simmer for 30-35 minutes until lentils are tender.
