- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup uncooked long-grain rice
- 1 can (10.5 oz) cream of chicken soup
- 2 cups water
- 1 cup shredded cheddar cheese
- 2 cups frozen mixed vegetables
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper, then set aside.
- In a mixing bowl, combine uncooked rice, cream of chicken soup, and water; stir until blended.
- Fold in frozen vegetables, onion powder, and garlic powder.
- Place seasoned chicken at the bottom of the baking dish and pour the rice mixture over it evenly.
- Cover with foil and bake for 45 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 15 minutes until bubbly and golden.
