  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup uncooked long-grain rice
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups water
  • 1 cup shredded cheddar cheese
  • 2 cups frozen mixed vegetables
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper, then set aside.
  3. In a mixing bowl, combine uncooked rice, cream of chicken soup, and water; stir until blended.
  4. Fold in frozen vegetables, onion powder, and garlic powder.
  5. Place seasoned chicken at the bottom of the baking dish and pour the rice mixture over it evenly.
  6. Cover with foil and bake for 45 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 15 minutes until bubbly and golden.
  7. Allow to cool slightly before serving.
