Ingredients

  • 1 pound boneless chicken thighs
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large skillet over medium heat. Sauté diced onions until golden brown.
  2. Add minced garlic and grated ginger; cook until fragrant.
  3. Stir in curry powder and chili powder for 30 seconds to enhance flavor.
  4. Add chicken thighs and cook until white on all sides (about 5 minutes).
  5. Pour in coconut milk, scraping any bits from the pan, and stir well.
  6. Reduce heat and simmer uncovered for 20-25 minutes until thickened. Season with salt and pepper as needed.
  7. Serve over rice or naan, garnished with fresh cilantro.
