Ingredients

  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 cup mixed bell peppers (red, yellow, green)
  • 1 cup broccoli florets
  • 1 cup carrots, thinly sliced
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup

Instructions

  1. Chop all vegetables into bite-sized pieces for even cooking.
  2. In a bowl, combine soy sauce, sesame oil, honey, garlic, salt, and pepper. Marinate chicken in this mixture while prepping vegetables.
  3. Preheat a skillet over medium-high heat. Add marinated chicken in a single layer and cook until browned (5-7 minutes).
  4. Add carrots first; after 3-4 minutes, add bell peppers and broccoli. Cook until tender.
  5. Toss everything together in the pan until well combined. Serve over rice or noodles.
