- 4–5 medium carrots, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1-inch piece fresh ginger, grated
- 4 cups low-sodium vegetable broth
- 1 cup coconut milk
- Juice of 1 lemon
- 1 tablespoon olive oil
Instructions
- In a large pot over medium heat, add olive oil. Sauté chopped onion and minced garlic until softened and fragrant.
- Stir in diced carrots and grated ginger; cook for an additional 3 minutes.
- Pour in vegetable broth to cover all ingredients. Bring to a gentle boil then reduce heat to simmer for 15-20 minutes until carrots are tender.
- Remove from heat and blend mixture until smooth using an immersion blender or regular blender.
- Return the blended soup to the pot, stir in coconut milk and lemon juice, seasoning with salt and pepper to taste.
- Serve hot, garnished with extra coconut milk or herbs as desired.
