Ingredients

  • 45 medium carrots, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 4 cups low-sodium vegetable broth
  • 1 cup coconut milk
  • Juice of 1 lemon
  • 1 tablespoon olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté chopped onion and minced garlic until softened and fragrant.
  2. Stir in diced carrots and grated ginger; cook for an additional 3 minutes.
  3. Pour in vegetable broth to cover all ingredients. Bring to a gentle boil then reduce heat to simmer for 15-20 minutes until carrots are tender.
  4. Remove from heat and blend mixture until smooth using an immersion blender or regular blender.
  5. Return the blended soup to the pot, stir in coconut milk and lemon juice, seasoning with salt and pepper to taste.
  6. Serve hot, garnished with extra coconut milk or herbs as desired.
