Buffalo Chicken Stuffed Peppers are a spicy, creamy delight that will leave your taste buds dancing. Perfect for game day or any occasion, these vibrant peppers are a crowd-pleaser!


Ingredients

  • 4 large bell peppers (red, yellow, or green)
  • 2 cups shredded rotisserie chicken
  • 1/2 cup Buffalo sauce
  • 8 oz cream cheese
  • 1 cup shredded cheese (sharp cheddar or mozzarella)
  • 2 green onions (chopped)
  • Ranch dressing (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Slice the tops off the bell peppers and remove seeds.
  3. In a bowl, mix shredded chicken, Buffalo sauce, cream cheese, and half of the shredded cheese until well combined.
  4. Stuff each pepper generously with the chicken mixture.
  5. Top with remaining shredded cheese.
  6. Cover with foil and bake for 25 minutes; uncover and bake for an additional 10 minutes until bubbly and golden.
