Ingredients

  • 8 oz cream cheese (full-fat)
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 cup blackberries (fresh or thawed if frozen)
  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted melted butter

Instructions

  1. Preheat the oven to 325°F (163°C) and grease an 8-inch springform pan.
  2. For the crust, combine graham cracker crumbs with melted butter and press firmly into the bottom of the prepared pan.
  3. In a bowl, beat softened cream cheese and sugar until smooth. Fold in sour cream and vanilla until fully incorporated.
  4. Gently mix in half of the blackberries; reserve the rest for topping.
  5. Pour the filling over the crust, smoothing out the top. Bake for 50-60 minutes until set but slightly jiggly in the center.
  6. Turn off the oven, crack open the door slightly, and let cool for about an hour inside to prevent cracks. Refrigerate for at least 4 hours or overnight before serving.
