- 1 cup granulated sugar
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1 cup blackberries (fresh or thawed if frozen)
- 1 cup graham cracker crumbs
- 4 tbsp unsalted melted butter
Instructions
- Preheat the oven to 325°F (163°C) and grease an 8-inch springform pan.
- For the crust, combine graham cracker crumbs with melted butter and press firmly into the bottom of the prepared pan.
- In a bowl, beat softened cream cheese and sugar until smooth. Fold in sour cream and vanilla until fully incorporated.
- Gently mix in half of the blackberries; reserve the rest for topping.
- Pour the filling over the crust, smoothing out the top. Bake for 50-60 minutes until set but slightly jiggly in the center.
- Turn off the oven, crack open the door slightly, and let cool for about an hour inside to prevent cracks. Refrigerate for at least 4 hours or overnight before serving.
