- 8 corn tortillas
- 2 cups red enchilada sauce
- 2 cups shredded cheese (cheddar & Monterey Jack)
- 1 medium onion, chopped
- 1 tsp cumin
- 1 tsp garlic powder
- 1 cup pinto beans, rinsed (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef with chopped onions until translucent.
- Stir in cumin and garlic powder; mix in pinto beans if using.
- Warm tortillas until pliable. Spoon beef mixture onto each tortilla, sprinkle with cheese, and roll up.
- Pour a layer of enchilada sauce into a baking dish. Arrange rolled tortillas seam-side down and cover with remaining sauce and cheese.
- Bake for 20 minutes until bubbly and golden.
