Ingredients

  • 1 lb lean ground beef
  • 8 corn tortillas
  • 2 cups red enchilada sauce
  • 2 cups shredded cheese (cheddar & Monterey Jack)
  • 1 medium onion, chopped
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 cup pinto beans, rinsed (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef with chopped onions until translucent.
  3. Stir in cumin and garlic powder; mix in pinto beans if using.
  4. Warm tortillas until pliable. Spoon beef mixture onto each tortilla, sprinkle with cheese, and roll up.
  5. Pour a layer of enchilada sauce into a baking dish. Arrange rolled tortillas seam-side down and cover with remaining sauce and cheese.
  6. Bake for 20 minutes until bubbly and golden.
