  • 4 strips of crispy bacon or chorizo
  • 1 cup shredded cheese (Cheddar or Monterey Jack)
  • 1/2 cup fresh salsa
  • 4 flour or corn tortillas
  • 1 ripe avocado (optional)
  • 1/2 cup diced vegetables like bell peppers and onions (optional)

Instructions

  1. Prepare your ingredients: chop vegetables and cook bacon or chorizo until crispy.
  2. In a bowl, whisk the eggs, seasoning with salt and pepper.
  3. Heat a non-stick skillet over medium heat and cook the whisked eggs for 3-4 minutes until soft.
  4. Lay out each tortilla and fill one side with the egg mixture, bacon/chorizo, cheese, salsa, and optional veggies.
