  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup plain yogurt
  • 2 tbsp curry powder
  • 1-inch fresh ginger, grated
  • 6 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup full-fat coconut milk
  • 2 medium onions, finely chopped
  • 2 tbsp olive oil
  • 2 tsp garam masala

  4. 4. Combine Chicken: Add marinated chicken to the skillet and cook until no longer pink (about 15 minutes), stirring occasionally.

  6. 6. Garnish and Serve: Adjust seasoning as needed; serve hot with rice or naan topped with fresh cilantro.
