  • 14 oz firm tofu, pressed and cubed
  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup broccoli florets
  • 1 cup carrots, thinly sliced
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp sesame oil
  • 2 green onions, chopped (for garnish)
  • 2 tbsp high-heat cooking oil (canola or peanut)

Instructions

  1. Press the tofu by wrapping it in a clean towel and placing a heavy object on top for 15 minutes.
  2. While the tofu presses, chop the bell peppers, broccoli, and carrots into bite-sized pieces.
  3. Heat cooking oil in a large skillet over medium-high heat. Add cubed tofu and sauté until golden brown on all sides (about 8-10 minutes).
  4. Add minced garlic and chopped vegetables to the skillet. Stir-fry for about 5 minutes until they soften slightly but remain crunchy.
  5. Pour soy sauce and sesame oil over the stir-fry mixture, stirring well to coat evenly. Cook for an additional minute until fragrant.
  6. Remove from heat, garnish with green onions, and serve immediately with rice or noodles.
