  • 2 large eggs
  • 0.75 cup granulated sugar (or brown sugar)
  • 0.5 cup milk (dairy or non-dairy)
  • 0.5 teaspoon vanilla extract
  • 0.5 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line with paper liners.
  2. Roast sweet potatoes until tender (about 45 minutes). Cool, peel, and mash until smooth.
  3. In a large bowl, combine mashed sweet potatoes, eggs, sugar, milk, and vanilla; mix until smooth.
  4. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually fold dry ingredients into the wet mixture until just combined; avoid over-mixing.
  6. Stir in optional pecans and fill muffin tins about two-thirds full.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
