- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 8 oz fusilli or penne pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 2 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water for 8-10 minutes until al dente. Drain and cool under cold running water.
- Season chicken with salt and pepper; grill or pan-sear over medium heat until cooked through (165°F). Rest before slicing into bite-sized pieces.
- In a large bowl, combine pasta, chicken, tomatoes, cucumber, onion, and feta cheese.
- Drizzle with olive oil and lemon juice; sprinkle with oregano, salt, and pepper. Toss gently to mix well.
