  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz fusilli or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water for 8-10 minutes until al dente. Drain and cool under cold running water.
  2. Season chicken with salt and pepper; grill or pan-sear over medium heat until cooked through (165°F). Rest before slicing into bite-sized pieces.
  3. In a large bowl, combine pasta, chicken, tomatoes, cucumber, onion, and feta cheese.
  4. Drizzle with olive oil and lemon juice; sprinkle with oregano, salt, and pepper. Toss gently to mix well.
  5. Chill in the fridge for at least 30 minutes before serving to enhance flavors.
