- 2 cups whole milk
- 3/4 cup sugar (adjust to taste)
- 3 tablespoons ghee (clarified butter)
- 1/4 cup chopped almonds and cashews
- 1/4 cup golden raisins
- 1/2 teaspoon cardamom powder
- Saffron strands (optional)
Instructions
- Grate the carrots using a box grater or food processor.
- In a heavy-bottomed pan, melt ghee over medium heat and sauté grated carrots until soft.
- Gradually add milk, stirring continuously; cook on low heat until thickened (30-40 minutes).
- Stir in sugar, mixing until dissolved.
- Add cardamom powder, chopped nuts, and raisins; cook for another 10-15 minutes.
- Drizzle in additional ghee before serving warm or chilled.
