Description

Carrot Halwa is a warm, sweet Indian dessert made from grated carrots simmered in milk and sugar, garnished with nuts for an irresistible treat that’s perfect for any occasion.


Ingredients

  • 45 medium-sized fresh carrots
  • 2 cups whole milk
  • 3/4 cup sugar (adjust to taste)
  • 3 tablespoons ghee (clarified butter)
  • 1/4 cup chopped almonds and cashews
  • 1/4 cup golden raisins
  • 1/2 teaspoon cardamom powder
  • Saffron strands (optional)

Instructions

  1. Grate the carrots using a box grater or food processor.
  2. In a heavy-bottomed pan, melt ghee over medium heat and sauté grated carrots until soft.
  3. Gradually add milk, stirring continuously; cook on low heat until thickened (30-40 minutes).
  4. Stir in sugar, mixing until dissolved.
  5. Add cardamom powder, chopped nuts, and raisins; cook for another 10-15 minutes.
  6. Drizzle in additional ghee before serving warm or chilled.
