  • ½ cup brown sugar (packed)
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup vegetable oil (or melted coconut oil)
  • 3 large eggs
  • 2 cups grated carrots (freshly grated)
  • ½ cup chopped nuts (optional)

Instructions

  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix vegetable oil and eggs until smooth.

  5. Gradually fold the wet mixture into the dry ingredients until just combined.
  6. Pour batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely before frosting.
