Description

Spicy Chickpea and Quinoa Salad is a vibrant, nutrient-dense dish bursting with flavor, perfect for meal prep or impressing guests at any gathering.


Ingredients

  • 1 cup quinoa
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • Fresh parsley and cilantro, chopped
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • Cumin and paprika
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. Cook in 2 cups of water or vegetable broth over medium heat until boiling. Reduce heat, cover, and simmer for 15 minutes until fluffy.
  2. While quinoa cooks, chop cherry tomatoes, cucumber, and red onion.
  3. In a small bowl, whisk together olive oil, lemon juice, cumin, and paprika.
  4. In a large bowl, combine cooked quinoa, chickpeas, chopped vegetables, and herbs. Drizzle dressing over the top and season with salt and pepper.
  5. Toss gently to combine. Chill in the refrigerator for at least 30 minutes before serving.
