- 2 cups basmati rice
- 1 cup mixed vegetables (carrots, peas, beans, potatoes)
- 1 large onion, sliced
- 2 tomatoes, chopped
- 1 tablespoon ginger-garlic paste
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- Salt to taste
- Fresh coriander and mint leaves for garnish
- 4 cups water or vegetable broth
- 3 tablespoons cooking oil or ghee
Instructions
- Rinse basmati rice under cold water until clear; soak for 30 minutes and drain.
- Heat oil in a large pot over medium heat; add cumin seeds and let splutter. Sauté sliced onions until golden brown.
- Stir in ginger-garlic paste and green chilies; cook until fragrant. Add chopped tomatoes and cook for about five minutes.
- Mix in the vegetables and cook for another five minutes before adding turmeric and garam masala.
- Add soaked rice and water/broth; season with salt. Bring to a boil, then reduce heat to low.
- Cover tightly and simmer for about 20 minutes until rice absorbs all liquid; let rest off heat for ten minutes before fluffing with a fork.
