  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (low-sodium)
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers, remove seeds, and set aside.
  2. In a skillet over medium heat, drizzle olive oil and sauté chopped onion until translucent (about 5 minutes). Add minced garlic and sauté for an additional minute.
  3. Add ground meat to the skillet and cook until browned. Stir in cooked rice and diced tomatoes; mix well.
  4. Season the mixture with cumin and paprika. Taste and adjust seasonings as desired.
  5. Fold in shredded halal cheese until melted through.
  6. Generously fill each bell pepper with the mixture, placing them upright in a baking dish covered with foil.
  7. Bake for about 30 minutes or until peppers are tender. Remove foil for an additional 10 minutes to toast the cheese topping.
