  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting off the tops and removing seeds; season the insides with salt and pepper.
  3. In a skillet over medium heat, sauté onion and garlic until fragrant. Add ground meat and cook until browned; drain excess fat.
  4. Stir in cooked rice or quinoa, diced tomatoes, and Italian seasoning until fully combined.
  5. Stuff each bell pepper with the filling mixture.
  6. Place stuffed peppers in a baking dish covered with aluminum foil; bake for about 30 minutes. Remove foil during the last 10 minutes.
