  • 1 lb lean ground turkey
  • 1 cup cooked rice (white or brown)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  2. Slice off tops of bell peppers and remove seeds; place them upright in the dish.

  5. Generously fill each bell pepper with the turkey mixture.
