  • 4 bell peppers (any color)
  • 1 pound lean ground beef
  • 1 cup cooked rice (white or brown)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 cup shredded cheese (mozzarella or cheddar)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds.
  3. In a skillet over medium heat, sauté onions until soft. Add garlic and cook until fragrant.
  4. Add ground beef to the skillet; cook until browned and crumbled.
  5. Stir in cooked rice, tomato sauce, and spices; mix until heated through.
  6. Stuff each pepper with the meat mixture and place them upright in a baking dish.
  7. Cover with foil and bake for 30 minutes. Remove foil, add cheese on top, and bake uncovered for an additional 10 minutes until bubbly.
