  • 1 cup long-grain rice
  • 2 cups water
  • 2 cups mixed vegetables (fresh or frozen)
  • 2 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp sesame oil

Instructions

  1. Rinse the rice under cold water until it runs clear. Cook with 2 cups of water in a pot until tender (about 18 minutes).
  2. While rice cooks, chop veggies and mince garlic and ginger.
  3. In a large skillet over medium-high heat, add oil. Sauté garlic and ginger until fragrant (30 seconds).
  4. Add mixed vegetables; stir-fry for 4-5 minutes until tender-crisp.
  5. Mix in cooked rice and soy sauce; stir-fry for an additional 3-4 minutes until well combined.
  6. Drizzle sesame oil before serving; toss to combine.
