  • 1 medium spaghetti squash (about 3 lbs)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 1 cup marinara sauce (or sauce of choice)
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C). Carefully slice the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Drizzle olive oil over the cut sides of the squash, then sprinkle with salt and pepper.
  3. Place squash halves cut-side down on a parchment-lined baking sheet and roast for 30-40 minutes until tender.
  4. Once cooked, let cool slightly, then flip over and use a fork to scrape out the strands into a bowl.
  5. Toss the spaghetti squash strands with your favorite sauce until evenly coated.
  6. Serve warm, topped with freshly grated Parmesan cheese.
