  • 8 oz smoked sausage (like Andouille), sliced
  • 4 cups low-sodium vegetable broth
  • 2 bay leaves
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1 cup long-grain white rice
  • Salt and black pepper to taste

Instructions

  1. In a large pot over medium heat, sauté the onion, bell pepper, and celery in olive oil until softened.
  2. Add minced garlic and sliced sausage; cook until browned.
