  • 2 small zucchinis (about 200g), sliced into half-moons
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 3 ripe tomatoes (about 300g), chopped
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • 1/4 cup fresh basil, chopped
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Wash and chop eggplant, zucchini, bell peppers, onion, and garlic.
  2. Heat olive oil in a skillet over medium heat; add onions and sauté until translucent. Add garlic and cook until fragrant.
  3. Stir in diced eggplant and cook for about 7-10 minutes until starting to soften.
  4. Add zucchini, bell peppers, tomatoes, salt, and pepper; stir well and simmer for about 15 minutes until tender.
  5. Toss in basil and thyme just before serving to preserve their freshness.
