Ingredients

  • 1 can (15 oz) canned chickpeas, rinsed and drained
  • 4 large whole wheat tortillas
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, sliced
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse the chickpeas under cold water and drain well. Chop the cherry tomatoes and slice the avocado.
  2. In a small bowl, whisk together lemon juice, olive oil, garlic powder, salt, and pepper for the dressing.
  3. In a mixing bowl, combine the chickpeas, chopped tomatoes, spinach leaves, and the dressing. Toss gently.
  4. Lay out the tortillas on a clean surface. Spoon generous amounts of the chickpea mixture onto each tortilla.
  5. Fold in the sides of each tortilla and roll from the bottom up tightly.
  6. Slice each wrap diagonally before serving.
