  • 1/2 cup bell peppers, diced

  • 1/4 cup onion, diced
  • 1/2 cup cheddar cheese, shredded
  • 1 tbsp olive oil or butter

Instructions

  1. Wash and chop the vegetables into small pieces.
  2. In a bowl, whisk the eggs until frothy and season with salt and pepper.
  3. Heat olive oil or butter in a non-stick skillet over medium heat.
  4. Sauté onions and bell peppers for about 2 minutes until soft; then add spinach until wilted.
  5. Pour the beaten eggs over the sautéed vegetables; cook undisturbed for 2–3 minutes until edges set.
  6. Sprinkle cheese on one half of the omelet, fold over, and cook for another minute until melted.
