Ingredients

  • 1/2 cup red onion, thinly sliced

  • 1 teaspoon fresh oregano, chopped
  • 1 teaspoon fresh basil, chopped
  • 2 tablespoons lemon juice
  • 1/2 cup crumbled feta cheese
  • Pita bread or couscous for serving

Instructions

  1. Wash and chop the tomatoes, bell peppers, and red onion into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat. Sauté minced garlic and red onion until translucent (about 3-4 minutes).
  3. Add diced tomatoes and bell peppers to the skillet. Stir occasionally until softened (around 5-7 minutes).
  4. Mix in oregano, basil, salt, pepper, and lemon juice; stir for an additional 2-3 minutes.
  5. Remove from heat and gently fold in crumbled feta cheese.
  6. Serve with pita bread or couscous, drizzling extra olive oil if desired.
