- 2 carrots, diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 teaspoons cumin seeds
- Juice of 1 lemon
- 4 cups low-sodium vegetable broth

- Salt and pepper to taste
- Fresh parsley or cilantro (optional)
Instructions
- Dice the onion and carrots; mince the garlic.
- In a large pot over medium heat, heat olive oil. Add cumin seeds and toast for about 1 minute until fragrant.
- Stir in the rinsed lentils and vegetable broth; bring to a gentle boil.
- Add the diced carrots, onion, and garlic. Simmer uncovered for 25-30 minutes until lentils are tender yet firm.
- Remove from heat, stir in fresh lemon juice, salt, and pepper to taste.
- Ladle into bowls and garnish with chopped parsley or cilantro if desired. Serve hot.
