Ingredients

  • 1 cup green or brown lentils
  • 2 carrots, diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 teaspoons cumin seeds
  • Juice of 1 lemon
  • 4 cups low-sodium vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley or cilantro (optional)

Instructions

  1. Dice the onion and carrots; mince the garlic.
  2. In a large pot over medium heat, heat olive oil. Add cumin seeds and toast for about 1 minute until fragrant.
  3. Stir in the rinsed lentils and vegetable broth; bring to a gentle boil.
  4. Add the diced carrots, onion, and garlic. Simmer uncovered for 25-30 minutes until lentils are tender yet firm.
  5. Remove from heat, stir in fresh lemon juice, salt, and pepper to taste.
  6. Ladle into bowls and garnish with chopped parsley or cilantro if desired. Serve hot.
