- 1 cup green or brown lentils, rinsed
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup celery, chopped
- 1 tsp cumin
- 1/2 tsp turmeric
- 4 cups low-sodium vegetable broth or water
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add minced garlic and cook for another minute.
- Stir in diced carrots and chopped celery; cook for 5 minutes until softened.
- Add rinsed lentils along with cumin and turmeric; stir well to combine.
- Pour in vegetable broth; bring to a gentle boil. Reduce heat to low and let simmer uncovered for 30-35 minutes until lentils are tender.
- For a creamier texture, use an immersion blender or carefully transfer portions to a regular blender.
- Season with salt and pepper to taste before serving.
