Description

This comforting Lentil Soup is the perfect light starter for your Eid celebrations. Its rich, earthy flavors and vibrant colors bring family and friends together around the table. Packed with nutrients and quick to prepare, this dish is ideal for festive gatherings or cozy weeknight dinners.


Ingredients

  • 1 cup green or brown lentils, rinsed
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, chopped
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 4 cups low-sodium vegetable broth or water
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  2. Stir in diced carrots and chopped celery; cook for 5 minutes until softened.
  3. Add rinsed lentils along with cumin and turmeric; stir well to combine.
  4. Pour in vegetable broth; bring to a gentle boil. Reduce heat to low and let simmer uncovered for 30-35 minutes until lentils are tender.
  5. For a creamier texture, use an immersion blender or carefully transfer portions to a regular blender.
  6. Season with salt and pepper to taste before serving.
