- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cooked quinoa
- 1 cup whole wheat breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup bell peppers, diced (any color)
- ¼ cup cilantro, chopped (or parsley)
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp salt
- 2 tbsp olive oil (for cooking)
Instructions
- Mash the black beans in a large bowl using a fork.
- In a pot, combine 1 cup quinoa with 2 cups water. Bring to boil, then reduce heat and simmer for about 15 minutes until fluffy.
- Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers until soft, about five minutes.
- In the bowl with mashed beans, add cooked quinoa, sautéed veggies, breadcrumbs, garlic, cilantro, cumin, paprika, and salt. Mix well.
- Form the mixture into six patties and place on a parchment-lined baking sheet.
- Grill or pan-fry patties for six minutes on each side until golden brown. Serve on toasted buns with your favorite toppings.
