Description

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1 cup whole wheat breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced (any color)
  • ¼ cup cilantro, chopped (or parsley)
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp salt
  • 2 tbsp olive oil (for cooking)

Instructions

  1. Mash the black beans in a large bowl using a fork.
  2. In a pot, combine 1 cup quinoa with 2 cups water. Bring to boil, then reduce heat and simmer for about 15 minutes until fluffy.
  3. Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers until soft, about five minutes.
  4. In the bowl with mashed beans, add cooked quinoa, sautéed veggies, breadcrumbs, garlic, cilantro, cumin, paprika, and salt. Mix well.
  5. Form the mixture into six patties and place on a parchment-lined baking sheet.
  6. Grill or pan-fry patties for six minutes on each side until golden brown. Serve on toasted buns with your favorite toppings.
