- 3 tablespoons extra virgin olive oil
- 2 teaspoons sea salt
- 1 teaspoon freshly cracked black pepper
- 3 tablespoons melted butter
- Fresh herbs (rosemary or thyme)

Instructions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the Russet potatoes thoroughly. Pat dry.
- Carefully slice each potato into thin slits, about 1/8 inch apart, stopping just before the bottom.
- Drizzle olive oil over each potato, sprinkling salt and pepper between slices.
- Pour melted butter on top and add fresh herbs between the potato slices.
- Place on a lined baking sheet and bake for 45-55 minutes until golden brown and tender.
