- Ground Beef (80/20 lean-to-fat ratio)
- Panko Breadcrumbs
- Fresh Parsley
- Eggs

- Canned Crushed Tomatoes

- Sub Rolls
Instructions
- Preheat oven to 400°F (200°C). In a bowl, mix ground beef, panko, parsley, eggs, garlic powder, salt, and pepper until well combined.
- Form into 2-inch meatballs and place on a greased baking sheet lined with parchment paper. Bake for 20-25 minutes until browned and cooked through (internal temperature of 160°F / 71°C).
- While the meatballs bake, heat olive oil in a saucepan over medium heat. Add crushed tomatoes, oregano, salt, and pepper; let simmer.
- Once baked, add the meatballs to the sauce to soak up flavors for 5-10 minutes.
- Slice sub rolls open and place on a tray. Spoon marinara sauce onto each roll, add meatballs, and top with mozzarella cheese.
- Broil until cheese is melted and bubbly (about 2-3 minutes). Serve hot.
