Description

Grasshopper Pie is a delightful no-bake dessert that combines rich chocolate and refreshing mint flavors, making it a perfect treat for any occasion.


Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 cups heavy whipping cream
  • 1 cup powdered sugar
  • 1 teaspoon pure mint extract
  • Green food coloring (optional)
  • 2 teaspoons unflavored gelatin powder
  • 2 tablespoons cold water
  • Chocolate syrup for drizzling

Instructions

  1. Preheat oven to 350°F (175°C). Mix chocolate cookie crumbs with melted butter until combined. Press into a pie dish and bake for 10 minutes. Let cool.
  2. Whip heavy cream until soft peaks form. Gradually add powdered sugar, continuing to whip until stiff peaks form.
  3. Fold in mint extract and food coloring until evenly mixed. Taste and adjust sweetness if needed.
  4. In a small saucepan, dissolve gelatin in cold water over low heat until liquefied. Gently fold into the whipped mixture.
  5. Pour filling into the cooled crust and smooth the top. Cover with plastic wrap and chill for at least 4 hours or until set.
  6. Serve drizzled with chocolate syrup.
