- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 2 cups heavy whipping cream
- 1 cup powdered sugar
- 1 teaspoon pure mint extract
- Green food coloring (optional)
- 2 teaspoons unflavored gelatin powder
- 2 tablespoons cold water
- Chocolate syrup for drizzling
Instructions
- Preheat oven to 350°F (175°C). Mix chocolate cookie crumbs with melted butter until combined. Press into a pie dish and bake for 10 minutes. Let cool.
- Whip heavy cream until soft peaks form. Gradually add powdered sugar, continuing to whip until stiff peaks form.
- Fold in mint extract and food coloring until evenly mixed. Taste and adjust sweetness if needed.
- In a small saucepan, dissolve gelatin in cold water over low heat until liquefied. Gently fold into the whipped mixture.
- Pour filling into the cooled crust and smooth the top. Cover with plastic wrap and chill for at least 4 hours or until set.
- Serve drizzled with chocolate syrup.
