- 1 can chickpeas (15 oz)
- 1 cup fresh parsley
- 3 cloves garlic
- ¼ cup tahini
- 2 pita breads
- 1 cup assorted vegetables (lettuce, tomatoes, cucumbers)
- 1 tsp cumin powder
- ¼ cup olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Drain and rinse the chickpeas. If using dried chickpeas, soak overnight.
- In a food processor, blend chickpeas with parsley, garlic, cumin, salt, and pepper until coarse.
- Shape the mixture into small balls or patties and place on parchment paper.
- Heat olive oil in a pan over medium heat. Fry falafels in batches until golden brown (about 3-4 minutes per side).
- For the garlic tahini sauce, whisk together tahini, minced garlic, lemon juice, water (to thin), salt, and pepper until smooth.
- Warm pita bread slightly; fill with falafels and fresh veggies. Drizzle with garlic tahini sauce and roll tightly.
