Indulge in this scrumptious falafel wrap filled with crispy falafels, fresh veggies, and creamy garlic tahini sauce—perfect for a satisfying lunch or dinner.


Ingredients

  • 1 can chickpeas (15 oz)
  • 1 cup fresh parsley
  • 3 cloves garlic
  • ¼ cup tahini
  • 2 pita breads
  • 1 cup assorted vegetables (lettuce, tomatoes, cucumbers)
  • 1 tsp cumin powder
  • ¼ cup olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the chickpeas. If using dried chickpeas, soak overnight.
  2. In a food processor, blend chickpeas with parsley, garlic, cumin, salt, and pepper until coarse.
  3. Shape the mixture into small balls or patties and place on parchment paper.
  4. Heat olive oil in a pan over medium heat. Fry falafels in batches until golden brown (about 3-4 minutes per side).
  5. For the garlic tahini sauce, whisk together tahini, minced garlic, lemon juice, water (to thin), salt, and pepper until smooth.
  6. Warm pita bread slightly; fill with falafels and fresh veggies. Drizzle with garlic tahini sauce and roll tightly.
