Ingredients
- Boneless chicken thighs
- Plain full-fat yogurt
- Garlic and ginger paste
- Ground spices (cumin, coriander, garam masala)
- Crushed tomatoes
- Cream or coconut milk
- Fresh cilantro
Instructions
- 1. Marinate the chicken: In a bowl, mix yogurt, garlic-ginger paste, cumin, coriander, and salt. Add chicken thighs and coat well. Marinate for at least 1 hour or overnight.
- 2. Cook the chicken: Heat oil in a large skillet over medium-high heat. Add marinated chicken pieces until golden brown on all sides (about 10 minutes). Remove and set aside.
- 3. Prepare the sauce: In the same skillet, sauté onions until translucent (about 5 minutes). Add crushed tomatoes and cook down slightly.
- 4. Add creaminess: Stir in cream (or coconut milk) and simmer until thickened (about 10 minutes).
- 5. Combine & simmer: Return cooked chicken to the sauce and simmer for another 15 minutes for flavors to meld.
- 6. Serve: Garnish with fresh cilantro and serve over basmati rice or with naan.
