  • 5 cups fresh spinach (washed)
  • 4 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • ½ cup grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  2. Heat olive oil in a pan over medium heat. Season chicken breasts with salt and pepper, then cook until golden brown (6-7 minutes per side).
  3. Add minced garlic to the pan; sauté until fragrant (about 30 seconds).
  4. Stir in fresh spinach, cooking until just wilted (1-2 minutes).
  5. Pour in chicken broth and lemon juice, scraping up browned bits from the pan.
  6. Add cornstarch slurry to thicken the sauce; mix well.
