- 3–4 boneless, skinless chicken breasts
- 8 oz elbow macaroni
- 2 cups sharp cheddar cheese, shredded
- 2 cups whole milk
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- Breadcrumbs for topping (optional)
Instructions
- Dice the chicken into bite-sized pieces. Boil water in a large pot and cook macaroni until al dente; drain and set aside.
- In a skillet over medium heat, melt butter. Add chicken, season with salt and pepper, and cook until browned (6-8 minutes).
- In another pot, melt butter on low heat. Whisk in flour until smooth. Gradually add milk while stirring until thickened (about 5 minutes).
- Stir in cheddar cheese until melted. Combine macaroni and chicken with the cheese sauce; mix well.
- Transfer to a baking dish, sprinkle with breadcrumbs if desired, and broil for 3-5 minutes until golden brown.
