  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 4 cups low-sodium beef broth
  • 3 carrots, sliced
  • 3 potatoes, peeled and diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. 1. Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown all sides (about 5 minutes). Remove from pot.
