  • 4 medium carrots, peeled and chopped
  • 3 large Yukon Gold potatoes, cut into chunks

  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil (for searing)

Instructions

  1. Prepare your ingredients by chopping all vegetables into similar sizes.
  2. Heat olive oil in a skillet over medium-high heat. Sear beef chunks until browned on all sides (about 5 minutes).
  3. Remove beef from the skillet and add minced garlic and onions to sauté until fragrant (about 3-5 minutes).
  4. Transfer seared beef back to the crock pot. Add carrots, potatoes, thyme, bay leaves, salt, pepper, and beef broth. Stir gently.
  5. Cover and cook on low for 8 hours or high for 4 hours.
