- 1 cup long-grain white rice (or brown rice)
- 1 cup queso cheese (freshly grated cheddar and Monterey Jack blend)
- 1 cup bell peppers (diced)
- 1 medium onion (finely diced)
- 2 cloves garlic (minced)
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Sear the steak in a hot skillet with salt and pepper for about 4-5 minutes per side until browned. Remove from heat and let rest.
- In a pot, boil water, add the rice, and cook according to package instructions (15-20 minutes) until fluffy.
- In another pan, heat olive oil over medium heat and sauté onions and bell peppers for about 5 minutes until softened.
- Slice the rested steak against the grain. Combine cooked rice, sautéed vegetables, sliced steak, and queso cheese in a large bowl.
- Transfer back to skillet over low heat; stir gently until cheese melts into the mixture.
- Serve hot, garnished with fresh cilantro or avocado slices.
